Bacon-Wrapped Dates

No oven? I've also had luck microwaving these for about 1 minute, or until the bacon is fully cooked.
Ingredients
  • 1 package pitted dates
  • 1 log of goat cheese (any flavor works; 4 ounces)
  • 1 package low-sodium bacon (thick cut if possible)
Instructions
  1. Preheat the oven to 400 degrees F.
  2. Slice each date lengthwise, so it opens like a book, and stuff them with goat cheese.
  3. Slice each piece of bacon into stubby thirds and wrap a piece around the stuffed date. Place each one on a baking sheet, seam side down. (That way it won't unravel during the cooking process.) Make sure you use a baking sheet with a lip around it, so that bacon grease doesn't drip off the sheet and onto the oven.
  4. Bake in the oven for 20-25 minutes, or until the bacon is fully cooked and is no longer translucent.
  5. Place dates on a paper towel-lined plate to cool and absorb excess grease.
