You don’t have to have a cousin Vinny — or live in New York City, with direct access to some of the country’s best delis and street vendors — to enjoy this dish. Just take matters into your own hands and make it yourself, capisci (or, to sound it out phonetically, kapeesh)?
Utensils required: knife, cutting board, frying pan, oven, large spoon (for mixing vegetables)
Ingredients:
Pepper & onion flavored sausage (found in the meat department of your local grocer)
1 red bell pepper
1 green bell pepper
1 yellow onion
1 can Ro-Tel chilis (or, for a milder flavor, use diced seasoned tomatoes)
1 small container of celery seed
1 tablespoon canola oil
1 package of Hoagie rolls (or rice, depending on your preference)
Time commitment: 30-35 minutes
Steps (serves 6-8):
1. First, slice up the peppers and onion into strips, then remove the casing from the sausage and cut the sausage into bite-sized pieces.
2. Next, place the sausage in the frying pan and begin cooking it on medium heat until it has browned. (Check out the photos below to see what it should look like.)
3. Now remove the sausage from the pan but keep the sausage’s juices in it. Then add a tablespoon of canola oil, along with the sliced peppers and onion. Sprinkle in a couple dashes of celery seed.
4. Stir the vegetables until they’ve cooked and caramelized (the onions will be a translucent brownish color).
5. Now you’re ready to add in the seasoned tomatoes/Ro-Tel and the sausage. Let it heat just long enough to warm everything up, then serve it atop a bed of rice or on Hoagie rolls.
