Plain old cereal and milk can start feeling pretty drab after a while, so mix things up with a low-fat yogurt parfait! (This is also a good breakfast alternative if, like me, you find that you often throw away half a jug of milk because you can’t drink it all before it expires. Yogurt lasts longer and you can buy it in smaller quantities.)
Utensils required: Glass, spoon, butter knife (for chopping fruit)
Ingredients:
6 ounces of lowfat/nonfat yogurt (In this recipe, we’re using vanilla)
1/2 cup dry cereal (you can use more or less, depending on your preference; I used Cocoa Pebbles)
1 banana (or 1/2 cup of whatever threat you like)
Time commitment: 2-7 minutes, depending on how much of a perfectionist you are
Steps:
1. Layer yogurt, fruit, then your cereal of choice until you run out of yogurt.
2. If presentation’s your thing, garnish with a couple pieces of cereal and a slice or two of fruit.
Create this dish in the dining hall by swinging by the cereal bar and filling a cup halfway with cereal. Then grab a yogurt cup and some fruit from the produce area. Next, using an empty drinking cup, layer your ingredients. Voila! It’s that easy.
In this recipe we combined chocolate crisped rice, vanilla yogurt and fresh banana for a mock-sundae flavor, but here are some other suggestions:
