Kitchen gadgets needed: Mixing bowl, stand mixer, spoonula, mini muffin tin, measuring cups, oven, oven mitts
Ingredients
1 box Spice cake mix
1 can pumpkin puree (15 ounces)
¼ cup brown sugar
2 tablespoons butter, softened
2 tablespoons rolled oats
2 tablespoons all-purpose flour
Instructions
Preheat the oven to 350 degrees F. Blend together the spice cake mix and pumpkin puree until they're just combined. (You can ignore the oil/eggs/etc the box mix typically calls for.) Pour into muffin tin cups, filling each one halfway.
In a separate bowl, blend the sugar, butter, oats and flour until they form a crumbly mixture. Sprinkle it atop each muffin.
Cook the muffins for 12-14 minutes, or until a toothpick inserted into the center comes out clean.
