If you’re like oh, pretty much everyone, you’ve probably resolved to live a little healthier this year, whether that means eating out less, hitting the gym more, sneaking a few extra vegetables into your diet, or some combination of the three.

Often, ‘eating healthy’ turns into salad, salad and more salad. And the occasional broth-based soup. Booooring.

We’ve been obsessed with roasting vegetables lately (particularly this Ranch-seasoned broccoli and cauliflower, or roasted Brussels sprouts), which made us wonder: How would roasted brocc taste when added to our go-to, ready-in-12-minutes spaghetti and meat sauce?

Pretty darn good, it turns out.

Start roasting the broccoli first, and it will be fresh out of the oven at roughly the same time as the pasta and meat sauce are ready. No reheating to enjoy a warm meal here!

If you want to make this even healthier, you could try ground turkey instead of beef, or swap out the pasta for whole wheat noodles or sliced zucchini/shredded spaghetti squash. You could also roast other vegetables and toss them in, like cherry tomatoes, bell peppers or onions.

Cozy Up with Roasted Broccoli Spaghetti

Ingredients

  • 1 bunch fresh broccoli
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 package spaghetti noodles (or pasta of your choice)
  • 1 pound ground beef
  • 1 teaspoon garlic powder
  • 1 jar marinara sauce
  • grated parmesan cheese (optional)

Instructions

  1. Preheat the oven to 425 degrees F.
  2. Wash and trim the stems from the broccoli, cutting it into bite-sized florets. Toss the broccoli in olive oil and salt, then spread out on a parchment-lined baking sheet. Roast for 18-20 minutes.
  3. As the broccoli roasts, prepare the pasta according to the package's instructions. Once it's cooked, drain the water and set the saucepan aside.
  4. Brown the ground beef in a saute pan over medium heat, using a spatula or wooden spoon to break up the beef into crumbles. Sprinkle on the garlic powder to season it.
  5. Once the meat is no longer pink, pour the mixture into a colander to get rid of any excess grease, then return the beef to the pan. Add tomato sauce and heat until it starts to bubble a bit. Stir the broccoli into the meat sauce.
  6. Place some pasta into each bowl, top with sauce, and garnish with grated parmesan cheese (if you feel like it).
