Cocktails don’t get easier than this: Mimosas require just two ingredients, and they’re practically foolproof to make. (Yup, even if you’re mixing them for a Sunday brunch before you’ve had coffee.) Just fill a Champagne flute — or wine glass or whatever’s on hand — halfway with Champagne or sparkling white wine, then pour in an equal amount of orange juice. The bubbles from the Champagne will float to the top and naturally mix the ingredients, so you don’t have to stir a thing. (In fact, stirring will jostle the carbonation, resulting in a flat, bland mimosa. At that point, you might as well be drinking plain ol’ OJ.)

What really separates a good mimosa from a great one is the quality of the ingredients you use. Skip the concentrated orange juice from a can; the real stuff is worth it. Fancy Champagne is great, but you don’t have to blow your brunch budget on it. The OJ is the key component here.

So, once you’ve mastered that mimosa, what are you going to make with it? We’ve got a few ideas: Peanut Butter Banana Pancakes, Orange-Infused French Toast, Huevos Rancheros or a Tater Fri-TOT-a are pretty delicious ways to start the day.
