Foodie Friday: 3-Ingredient Ghost Truffles

I was ready to moonwalk down the street to the tune of “Casper, the Friendly Ghost” when I thought of this recipe. It was the perfect combination of the truffles that captured Buzzfeed’s attention AND Halloween goofiness. I knew, as sure as I knew (uh, spoiler alert!) that Miley Cyrus was going to be the pop-culture costume of the year, that these chocolate-y wonders had to be featured on Collegiate Cook.

I giddily darted through the aisles at Target to elbow grannies out of the way to get to the last package of orange Oreos, just for this very post.

Then, just as I went to make them, I flipped through a copy of Everyday with Rachael Ray.

D’oh.

There were the ghost truffles, in all their white-chocolate-and-spooky-faced glory. Which immediately made me wonder if I absentmindedly flipped through an issue in a checkout line or saw a reference in my Facebook newsfeed or somehow stole the idea and didn’t realize it. It also reminded me that not all ideas are that original (particularly when it comes to recipes), and reinforced that mid-’90s mantra that great minds think alike.

Regardless of where they came from, these treats are so craveworthy that you may have to put a hex on yourself to keep from eating the whole batch. In one sitting. During half a YouTube video.

Baker’s Note: Let the truffles’ white chocolate coating harden before creating the eyes/mouth. You may have to do a little smoothing and brushing away of chocolate shavings, but the lines turn out crisper and neater that way. Plus, you can play around with the ghost’s expressions.

This recipe makes about 20 truffles, and you can prepare ’em right in your dorm room (no bake, aside from melting the chocolate in the micro!).

Nobody can say “boo” to that.

White Chocolate Ghost Truffles

Quite possibly the easiest Halloween dessert. (Three ingredients! No baking! Dorm approved!)
Ingredients
  • 1 package Oreos
  • 1 block reduced-fat cream cheese (8 ounces), softened
  • 1 bag white chocolate chips (10-12 ounces)
Instructions
  1. Place a few Oreos in a resealable bag and crush them with a spoon. Repeat until all Oreos have been reduced to little crumbles.
  2. Combine cream cheese and Oreos in a mixing bowl until a dough forms. Mold the dough into 1-inch cones (or ghost shapes). Place on a baking sheet or plate and put in the freezer for at least 20 minutes.
  3. Pour white chocolate chips into a microwave-safe bowl and microwave for 30 seconds, stir, then microwave for another 30 seconds. Repeat until all of the chips are melted.
  4. Holding the ghosts upside-down, dip them into the melted white chocolate, using a spoon to help coat the sides. Place on a plate or baking sheet and let dry for about 10-15 minutes. Use a toothpick to draw on faces.
