Nate’s Pulled Pork Breakfast Wraps

I know what you’re thinking: Candace, the world isn’t ready for this! Minds will explode! Palates will be shocked! Even South Beach Diet devotees’ jaws would drop at such a meaty medley of deliciousness!

Trust me, friends, I was as bewildered as you are when my boyfriend came up with this brunch-time treat. (And okay, if you’re some kind of renegade who regularly eats pulled pork for breakfast, I apologize if I’m making entirely too big a deal out of this. Wait — no, I don’t apologize. If you’ve had it, then surely you understand all my commotion. Carry on.)

Utensils required: frying pan/spatula/stovetop (not necessary, though, as the eggs/bacon can be made in the microwave), knife, microwave, bowl

Ingredients (serves 2):

  • 4 eggs
  • 4 slices of bacon
  • 2 tortillas/whole wheat wraps
  • pulled pork (made in advance — check out the recipe here)
  • shredded Mexican cheese
  • 4 tablespoons salsa

Time commitment: 12-15 minutes

Steps:

1. Turn the stovetop onto medium heat, and crack the eggs into a pan, using a fork or whisk to beat the egg so the yolk and whites are combined. About halfway through, fold in the cheese so it melts into the eggs, making them even more flavorful.

Microwave users: Simply crack the eggs into a microwave-safe bowl, pour in a tablespoon of water, scramble it up until the eggs form a pale yellow mixture, and pop it into the microwave for 30 seconds. Then take it out, stir in half the cheese and repeat the process until the eggs are fluffy and the cheese has fully melted.

2. Divide the eggs onto two open tortillas, then return to your trusty pan (or microwave) — it’s bacon time!

Stovetop traditionalists: Place bacon onto the same frying pan you used for the eggs, and let them sizzle over medium heat. Be careful — oil from the bacon can pop and splatter at you. The bacon is ready when the pink part of the meat is no longer translucent.

Microwave MacGyvers: Place a couple layers of paper towel atop a microwave-safe dish, then top it with bacon. Cook it in the microwave for about 3 minutes, or until dark pink and slightly crispy.

3. Once the bacon is ready, add it to the eggs and tortillas. Then sprinkle on some cheese and spoon a light layer of shredded pork.

4. Place it in the microwave for 30-40 seconds, just to heat the pork and melt the cheese.

5. Finally, add a little salsa or BBQ sauce to the wrap, then roll it up and enjoy!
