Spicy egg & cheese bagel

2010-01-30_12_05_04You want to eat all those bagels you bought before they turn rock hard, let the thought of another plain bagel with its familiar schmear of cream cheese or butter just sounds, well, plain. You need some creative cooking to help you escape the doldrums of bland morning breakfasts. With sauteed onions and a drizzle of taco sauce (or salsa — whatever’s in your pantry), you’ve got a quick, easy meal that’s anything but boring.

Utensils required: cutting board, spatula, small mixing bowl, knife, stove, frying pan

Ingredients:

– 1 egg

– 1 bagel

– 1/4 shredded cheese

– 2 tablespoons taco sauce/salsa

– 1 teaspoon ground black pepper

– 2 tablespoons milk

– 2 tablespoons diced onions or scallions

Time commitment: 12-15 minutes

Steps (makes one sandwich):

1. Crack an egg in the mixing bowl and add the milk, stirring the two together thoroughly. Add in the pepper.

2. Next, turn the burner on medium and place the frying pan on top. Finely dice the onions/scallions. If you’re using onions, cook them on the frying pan to let them soften and caramellize. Once they’ve turned a golden, translucent color, take them out of the frying pan and set them aside on the cutting board.

3. Pour the egg and milk mixture into the frying pan. Sprinkle in the pepper and onions, then use the spatula to scramble everything together.

4. As the scramble cooks, cut the bagel and place it in the toaster.

5. Once the scramble is solid, pour a fine layer of cheese over it and flip the egg mixture in half, letting the cheese melt in the center of it. Turn off the burner and place the scramble atop the bagel.

6. Finally, drizzle the taco sauce/salsa on the mix, then top it off with the other bagel half. It’s that easy.
